Avocado Chicken Salad

Ingredients: {2 Servings}

4 C Chicken Breast {Cooked & Chopped}

3/4 C Stalk Celery {Rough Chop}

2 sm. Green Onions {Chopped}

1/2 Avocado {Diced}

1/4 C Black Olives {chopped}

3/4 C Mayonnaise

1 Heaping Tbsp Greek Yogurt or Sour Cream

Handful Toasted Silvered Almonds {Chopped}

Salt & Pepper

 

Directions:

Add all ingredients to bowl besides mayo, yogurt and avocado. Add mayo in small increments until creamy consistency appears. Next add greek yogurt and salt and pepper to taste. When ready to serve gently mix in ripe avocado. Serve on toasted sourdough or with crackers.

*For a smoother consistency mix in avocado until blended with other ingredients.
