One of my favorite things about the summer season is the abundance of fresh produce. Coming from a small farming community I've grown up embracing and enjoying sweet corn, in fact, I pretty much live on it in the summer. With so many different ways to enjoy, I've come up with a few to share with you over the next few weeks.

This weeks easy vegetable melody is just as good alone as it is paired with long grain rice. Find out how to prepare the dish below:

Ingredients:

2 C Cooked fresh corn 

1/2 C finely Diced Red Onion

1/2 C Diced Cucumber

1/2 C Diced Red Pepper

1 Pint Halved Cherry Tomatoes 

Salt & Pepper to Taste

Directions:

Combine all prepared ingredients in a large bowl. Season with salt and pepper and mix well. Serve over rice or enjoy by itself.

For a bit of tang squeeze a fresh lime and add avocado.
