BBQ Chicken Salad
When it comes to weekday meals I'm all for quick and easy prep! I always keep chicken on hand along with a few fresh ingredients so if I'm running behind I can throw a few things together. This BBQ chicken salad is perfect for the the season and utilizes ingredients most of us already have in the fridge.
Ingredients:
- 2 Romaine lettuce heads, chopped
- 1 C Cooked or grilled chicken breast, chopped
- 1 cucumber, diced
- 1 Tomato, Chopped
- 1/4 C BBQ sauce
- 2 tbsp. Yogurt Ranch
- Salt & Pepper to taste
Croutons:
- 1-2 Slices of Sliced Sourdough or 1/4 French Loaf
- 1/4 Butter
- 1 tbsp. Parmesan Cheese
- 1-2 Dashes Garlic Salt

Heat butter in large skillet over low-medium heat. Cut bread into cubes and place in skillet once butter is completely melted. Cook, occasionally flipping bread until golden brown, about 6-10 minutes. Add 1-2 dashes garlic salt and parmesan cheese, cook for another minute.
Salad Prep:
Place chopped romaine into a large salad bowl. Layer with tomatoes, cucumber and croutons. Roughly dice cooked chicken breast and add to salad. Combine yogurt ranch and BBQ sauce of your choice in a small bowl. Drizzle over salad and serve.
