Asian Pasta Salad
When it comes to asian cuisine, I normally like to leave the cooking to the pros. I just never seem to be able to recreate the flavor combinations I find in my favorite restaurants or dishes. However, this Asian chicken pasta is the clear exception to the rule. With an array of fresh and flavorful ingredients (most of which can be found in your local store) come together in perfect savory unison. I first tried this recipe several year ago from a very close like-family friend. I was instantly hooked, and my mom being the lovely lady that she is adopted the dish into our family cookbook. INGREDIENTS
Pasta Salad
2 Chicken breast, cooked & cubed
6 Green Onions, thinly chopped
2 Carrots, peeled and thinly grated
1 Red bell pepper, chopped
1 Can bamboo shoots, drained
1/4 C Cilantro, washed and chopped
1 Can Baby Corn, drained
2 C Flat snow peas, chopped in half
1 Box Angel hair pasta
Dressing: Mix & Chill
1/4 C Soy Sauce
1 C Mayonnaise
1 tsp Dijon mustard
1/4 C Sesame Oil
1 Tbsp Chili Oil
DIRECTIONS
Break pasta into 1/3 pieces, add to a roiling boil, cook, drain and set aside. Toss pasta with 1/2 C soy sauce and 1/4 C peanut oil. Toss salad ingredients with dressing and top with toasted sesame seeds for garnish. Serve chilled or warm!
