Tortilla soup has always been one of my favorite go-to recipes. What makes this soup so delicious is the use of fresh seasonal ingredients. I know your probably thinking, soup in the summer? Yes! Think sun-ripened tomatoes, crisp cilantro, and buttery avocados. Incorporating fresh produce into your meals makes all the difference in the overall taste. INGREDIENTS:

8 Corn tortillas
1 sm. Can Mild green chiles
1/2 Tsp. Ground Cumin
2 Garlic Cloves, mined
1/2 C Onions, finely chopped
3 14 1/2 oz. Chicken Broth
1 14 1/2 oz. Diced Tomatoes 
1/2 C Mild Red Enchilada Sause
1 Tbl. Fresh Lime Juice
1/4 C Cilantro, chopped
2-3 C Ground Turkey, cooked

DIRECTIONS:

Cut tortillas into 1-inch pieces. Heat oil (4 Tbs) in large sauce pan/pot over medium heat. Add tortilla pieces and cook until crisp, about 5-7 minutes. Add onion and garlic, sauté for 2 minutes. Add remaining ingredients and stir. Simmer gently over medium-low heat for 20 minutes. Season with salt and pepper to taste. Ladle soup into bowls, garnish with cheddar cheese, fresh cilantro, crushed tortillas, and avocado. *If you'd prefer to have chicken over turkey simply replace turkey with two cooked chicken breast(s).
