Quick & Delicious Pop-Overs
Meet my weakness, freshly baked, light and fluffy pop-overs. My love affair with pop-overs started years ago when I was introduced to the airy puffs of goodness at Neiman Marcus. Served hot with a slide of whipped strawberry butter, I was determined to find the recipe and make my own.
I have to say I've tested a few recipes, dabbled with a few tin sizes and finally I think I've found a winner. Though, I can't take the credit for this one, this particular recipe was a gift (yes, gift) from my lovely mom. Once, you try them you will realize why I referred to them as a present.
In all honesty the recipe is extremely easy and a great treat that will impress any size dinner party!
Ingredients: {Makes 12 pop-overs}
- 3 Eggs
- 1 C Flour
- 1 C Milk
- 1 tsp Salt
Directions:
Prior to mixing up the batter, place a standard size muffin tin in the freezer for 15 minutes. Next, combine eggs, flour, milk and salt and stir until well mixed. Once the tin has been in the freezer for the required time fill each hole with the batter {roughly 3/4 or 1/2" for the top}. The next step is crucial to the perfect pop-overs.
Place the prepared tin in a cold oven and set to bake at 450 degrees for 25-30 minutes {Mine are usually done at 25}.
For a delicious compliment pair the pop-overs with whipped strawberry butter. This can be make quickly with 1/2 stick of unsalted butter and 3-4 Tbs of your favorite jam.
