Fresh Tomato Salad
When it comes to the workweek, I often times find myself putting together quick and easy meals. This seasonal tomato salad is a great recipe for lunchtime or a side for a weeknight dinner. With only three main ingredients it really relies on fresh vegetables to bring big flavor. For a more complex array of flavors top with a simple balsamic reduction (here).
Ingredients:
- 2 Lg Tomatoes {thinly sliced}
- 1 cucumber {thinly sliced}
- 1/3 Red onion {thinly sliced}
- Extra Virgin Olive Oil
- Balsamic Vinegar
- Black Pepper
- Salt
Directions:
Arrange cut and sliced ingredients on a large plate, drizzle EVOO and balsamic vinegar over the top. Grind fresh black pepper and a sprinkle of salt to finish off the dish!
