Lobster Roll


After serving up a delicious and hearty meal of risotto and lobster {seen here }, we were left with a container full of left-overs. Now, I'm usually not a huge fan of left over seafood, but theres no way you can let perfectly good lobster go to waste! This recipe was the perfect compliment to a warm spring afternoon. The lobster was the star of the show, and tasted as fresh as the day of purchase. 

Ingredients:

  • Meat from 1 Lobster Tail {pre-cooked, chilled, and cubed}

  • 1/2 Med. Cucumber {diced}

  • 2 T Mayo

  • 1 t fresh tarragon

  • Season with sea salt & cracked pepper

Directions:

Serve on a toasted / halved french roll
