Peach Green Tea Bellini
As we enter into Indian summer here in San Francisco, there really isn’t any better time to indulge in a refreshing beverage. To me nothing is quite as refreshing as an iced tea on a hot afternoon, especially when it’s done with a twist. This season I’m infusing a new favorite, Pique Tea, with a classic peach bellini.
Since peaches are at their peak of freshness, it’s only right that I give them their time to shine. Both, incredibly juicy and sweet, this fruit needs a partner to balance things out, which is where the Pique Tea Crystals come in. For those of you who may not be as familiar, the Tea Crystal are made from organic whole tea leaves which are hand selected to be brewed and crystallized to absolute perfection. The whole process of brewing the tea is just about as easy as can be and yields a surprisingly full bodied tea experience.
Ingredients
1 Pack Pique Sencha Organic Green Tea
1 C Water (Tea brewing)
Prosecco
1 Peach
Directions
Add Pique Sencha Organic Green Tea Crystals to 1 cup water, stir until dissolved, and set aside. Next, cut peach in half, removing skin, pit and placing in a cocktail shaker. Using a muddler or an end of a wooden spoon, mash peaches until pulverized. Pour cold tea over peaches, along with 2-3 ice cubes, and stir. Strain the tea and peach puree into a coupe or flute. Slowly top with prosecco, letting the foam settle, until full. Serve with peach garnish.
