Over the weekend, I was in somewhat of a food-funk, you know a time when you can't think of anything to make. After watching the clock tick well into dinner time I racked my brain for anything that I could whip up within 50 minuets or so. I've been a long time fan of broccoli beef, so I thought why not throw some pre-made shredded chicken into the mix.




Ingredients:

Broccoli stalk
Shredded Chicken
Jasmine Rice
Chicken Stock
Water
Chives {minced}
Sm Sweet Onion (Minced}
Soy Sauce
Brown Sugar
Rice Wine Vinegar
Huy Fong Sriracha


Recipe:

Start by cooking up your favorite white rice, you can really use any kind, but I prefer Jasmine. I decided to do rice-pilaf to add an extra something, you can find a basic recipe here. Since this dinner was done somewhat on a whim, I do not have exact measurements for everything, but hey thats the fun of cooking, some meals need personalization! 

When there is about 10-15 minutes left on your rice start to prepare your broccoli or veggie of choice. Wash well and begin to break the larger bunch up into bite size florets {the image picture above was not the cooking size}. Cut off the bottoms of the stems and bring out your pot and steamer. 

Depending on the size of your pot bring about 3/4-1 inch of water to a boil. Add the florets, cover and reduce the heat to medium-medium low. The broccoli should cook for about 5 minutes or until the skin is tender enough to puncture with a fork. 

If you timed correctly the rice should be done around the same time as your broccoli. You can remove the pots from the heat while you whip up the sause, I just grabbed a few things I had on hand..

Mix together:

tbsp Soy Sause

1 tbsp Rice Wine Vinegar

1/2 tsp Brown Sugar

1 tsp Huy Fong Sriracha {I used quite a bit more, depending on your  heat preference add more or less}


2 tsp Minced Chives


Remember a little goes a long way so don't douce your food in this sause..or do..?

I finished off the dish by adding a little sause with the pre-cooked shredded chicken!


There you have it..the end solution to a dinner-funk!
