Shrimp Scampi

If you've been reading my blog for a little while, you'll notice that I'm quite the seafood-aholic. Thankfully for me I get to enjoy my dad fabulous cooking. This particular dish has been a staple in our household for awhile and one of my top favorites {which can often be hard to decide on}. 

Ingredients:

  • 3 Cups White Rice {cooked}
  • 20 Raw Shrimp {16/20 CT}
  • 1/4 lb. Butter
  • 2 Lemons {Juice}
  • 1 Tsp. Fresh Parsley {Minced}
  • 4-6 Cloves Garlic {Minced}
  • 3 Tbsp.  Italian Panko Bread Crumbs
  • 4 Oz. Dry Sherry
  • 1/2 Tsp. Pepper

Directions:

Start by cleaning and deveining all shrimp. Place butter in large sauté pan and melt. Add garlic and sauté over med. heat. {Do not burn better}. Add shrimp, Panko and pepper. 

Simmer for 1 minute, add sherry. Squeeze lemon juice over mixture. Add Parsley and simmer 2 minutes, or until sauce begins to thicken. 

Serve over white rice and enjoy with a Chardonnay.
