Chopped Summer Salad

Every once in a while, I put together a recipe that is both totally unexpected and completely satisfying. I'm talking about everything but the kitchen sink meals, and this chopped salad is one of these! We've all have experienced those evenings when the thought of planning and making dinner has you coming up blank. To avoid frozen meals or delivery, I'll be sharing a few of my favorite quick-fix meals you keep you feeling happy and healthy!

Ingredients: (quantities will vary depending on serving size) 

  • 1/2 C Cherry Tomatoes

  • 1/2 Avocado

  • 1/3 C Red Onion

  • 2 Green Onion (diced)

  • 1/3 C Jicama (diced)

  • 1/4 C Cheddar Cheese

  • Lime (Juice)

  • 3 C Romane Lettuce

Directions:

Gather fresh produce you have on hand, for this particular salad you will be dicing or chopping all of your ingredients. Add your greens first and add your chopped toppings in rows (as shown). This meal is great for dinner parties or those more impressed by beautiful food. Squeeze lime over the top of all ingredients and add a few dashes of pepper. For a quick and easy dressing top with a basic vinaigrette (seen here).
